Finalizing a ton of stuff over the next week or so. Namely, brewing equipment, design plans, finances, artwork, just to name a few. Phish did some kick-ass rework of our logo and made it logos instead.
The pace is going to pick up real soon.
Meantime... demolition work continues.
Know it has been a long time since the last update... learning how slow stuff goes when trying to open a business.
Still trying to finalize finances. Not a question of having the money, but with rollover from 401Ks and having a third investor who needs shares plus remainder as loan to be paid at a later date, we are just waiting on a company valuation so we can calculate shares. We have decided on our system and we have financing on that lined up already.
Meantime, waiting on electricians and plumbers to get back to architect so we can get filed for building permits. Also, learning, that like a house, as you start to look to make modifications, you run across issues as you peel back the layers of the onion. Two biggest ones so far has been electric going to building. For much of the equipment we need three phase electric. Turns out non of the businesses on the block have it and we'll need a new run to our building... cha-ching. Also, trying to get an engineer in to see what we'll need to do if we want to put ac/heat/glycol system on the roof. Gut says its gonna be a bunch of steel... just need to find out how much. If it is too much, we are going to have to revamp and figure out ways around it. Besides that, we are getting close to being done with much of the internal gutting of the property that we can do without getting permits.

Thinking outside the 6 pack, if you needed some capital (without selling shares or ceding portions of ownership) I am sure that many here would gladly per-purchase some of your libations and get them sent when they are bottled and ready to age, to drink, to savor.

Appreciate it. Nah... she is a close family friend and I was very close to her late husband. Meeting with architect next Thursday to finalize MEP plans so we can file with town. Plan is to do that before Christmas
So had a huge "scare" on Saturday. We were down doing demo work and there is a knock on the door... which is odd in an of itself. Turns out it was one of the electricians. THAT was not the scare. No, the scare was him discussing getting three-phase electric dropped into our building. He just casually drops that once we have building permits that we'll have to file plans with the electric company to have that done and it will take a minimum of 3-4 months before they could even start work. That was like being punched in the guy by Mike Tyson... in his prime. So, I reached out to the equipment manufacturer and explained the issue... he said that we'd just need to slightly downgrade our chiller and get a three-phase converter... aaaaaannnd we are back on schedule again. Not sure why the electrician didn't offer that up as an option to begin with.
Update...
So we should be finally ready to file with the town this week. Plans are finalized... we just need to figure some stuff out with the Department of Public Works regarding sewers... but we can move forward without that. I am finalizing our state liquor authority application. Once both of those are done... we are ordering equipment.
Pace is definitely going to be picking up in the next few months.
So... in the last couple weeks I have learned more about wastewater management than I would ever care to know. Trippy conversation with architects today... because of aforementioned wastewater management... I brought up production logistics... just me thinking about my production house workflow. Felt kinda real and damn cool.
Longtime coming... but everything was turned into the town today... we are on the clock. I am finalizing our SLA (State Liquor Authority) application tomorrow and off that one goes. After that, we have some county stuff to deal with, but nothing outrageous, just the aforementioned wastewater issue. Next week we are planning on working out some stuff with a finance company to lease (to buy) the equipment... then we are getting that ordered as well. Gonna be a busy spring.
Application for state license is in the mail. Oddly, when you send your application in to the NYS Liquor Authority... you send it to Philadelphia PA?????
