Tonight I opened a Dogfish Head 120 Minute IPA, part of a case I purchased last July. Nearly 18 months ago when this wild concoction was bottled up, it clocked in at 20% - alcohol very hot in what was otherwise a spicy, fiery barleywine with a wicked watercress crackle. Too wild, too young.

Today, silk.

Complex nose of green tea and cardamom framed in an earthy background of clay and maple. The sweetness comes on slowly like a hint of warm molasses. Caramel and dulce de leche crowd the attack, pulling back to reveal thyme & basil decorating the hoppiness -- mellowed and not especially bitter. Balanced release of changing flavors continued through a looooong finish that pulsed vanilla and oak.

Dessert in a glass.
